I'm sticking by my point that the brewpub launched the craft beer revolution in most places. Whether it's still relevant is open to question. 'the gist of my post is that breweries historically needed food to keep their businesses afloat'<br />reduced the scope of the topic to manageable.<br /><br />There are 11 breweries in Boulder County and 07 brewpubs.<br />The 06 breweries established in the last 4 1/2 years do not serve food:<br />Upslope, New Planet, Asher, Crystal Springs, BRU Handmade Ales, Bootstrap.<br />Two occasionally feature 'a food truck'; one advocates 'bring-your-own' or food delivery; one has its [gluten free] beer contract brewed and distributes only in 12 oz bottles; two do not have a tasting room/taproom, one of these only distributes kegs to restaurants, the other distributes keg to restaurant and 12 oz bottles and cans and bombers to beer emporiums.<br /><br />Two breweries established in Sept 1993, Avery and Left Hand, do not have a kitchen. Left Hand occasionally features 'a food truck'. Avery have food delivered by a nearby gourmet caterer. Neither dependent of food sales.<br /><br />As before, only Oskar Blues, started as a brewpub. Most began in leased units in industrial parks; two are garage nano-breweries. Virtually all belie the Calagione brewpub to micro to regional craft brewery model. Craft beer is intensely local. Hail, hail, the diversity of flavor and enterprise,<br /><br />RE: financing<br />I chatted with the co-founder of Bootstrap Brewing Co., Niwot, Colo. She said they used a home equity loan to finance their 1300 ft^2 brewery and taproom. Small tasting room, limited hours, no food. I understand the benefits of bringing your own food. However, the gist of my post is that breweries historically needed food to keep their businesses afloat. Gigantic and a few others may prove that theory obsolete. While I'll visit breweries with taprooms and brewpubs alike, I enjoy the freedom to have a beer with the food of my choice. Case in point, one of my new favorites, Gigantic. So, I am just leaving a bookmark here to say, I regard this a topic of interest and I will comment in future.<br /><br />Craft beer is intensely local. I have developed a fair level of knowledge about the craft breweries and brewpubs in Boulder, Colo., since I moved back to Boulder, Colo., in September. I say I have continue my work on the MBA [Master of Beer Appreciation] I started in Salem, Ore., in 2009Q2.<br /><br />I do not believe Boulder Country craft breweries [11 as on yesterday] follow the model you outline above. Of these 11 only 01, Oskar Blues, started as a brewpub. Most began in leased units in industrial parks. <br /><br />I must stop.
